Lemongrass in Beer and Wine and Spirits

Just as the name suggests, lemongrass is a grass with a citrus flavor. It would appear to be well suited for flavoring beverages, and not just shrimp and scallops.

Loft makes an organic lemongrass liqueur, in Portland, Oregon. Magic Hat makes Circus Boy beer brewed with lemongrass, in South Burlington, Vermont. SakeOne makes Moonstone Coconut-Lemongrass Saké, in Forest Grove, Oregon.

FoodPair explains that:

lemongrass is an aromatic herb used in Southeast Asian cuisines. Because of its pungent flavor, it is used in small amounts. Common uses include soups and curries. The ingredient is most often used fresh, but can also be dried and used in powder form. Another popular popular use of lemongrass is in teas.

Wine Without Sulfites

shigaTTB classifies sake as a wine, for label purposes. Most wines have sulfites — but sake appears to be a notable exception. On the Shiga Sake label above, Village Wine reports that “Sakes do not contain sulfites.” TTB does not seem to disagree and has approved many such labels.

Another sake importer, Vine Connections, concurs and reports that “Premium sake is gluten-free, sulfite free, and kosher.”

The Mighty Mushroom

Just when we got accustomed to mushrooms in the entree, two companies in Korea went and added mushrooms to the beverage. Tannenbaum “Mushroom Sake” is Rice Wine with Rice Neutral Spirits and Mushroom. Song-I Ju is Grain Neutral Spirits with Natural Matsutake Mushroom Flavor.
